If you forget to print your Target coupons before leaving home (or you see a great deal while shopping for something and you know there's a Target coupon for it), don't worry! You can now print coupons in-store at the Target kiosks near the customer service desk! This also saves you ink and paper and guarantees that they'll work at the checkout scanner. You'll need to select "Shop Target Online" and navigate the website to find coupons, then "cut" them somehow, but it's a nice option.

Recipes: Favorite Bread Machine Breads

For the last year, our bread machine has been quite busy! I usually bake one or two loaves each week, depending on what we need. I purchase 25-pound bags of bread flour and bricks of yeast at Sam's Club to stretch the savings. These have become tried-and-true standby recipes.

No bread machine? Keep your eyes open and search Craigslist, garage sales and thrift stores for nice models that are barely used!

EXCELLENT SANDWICH BREAD

1 cup water
1 teaspoon salt

2 tablespoons margarine, cut into chunks

1/4 cup sugar

2 egg whites (or 1 egg)

3 cups bread flour

1 1/2 teaspoons yeast

Place ingredients in pan in the order specified by your bread machine.

Bake on basic setting, medium crust, 1.5 lb loaf. Remove from bread pan and cool on rack.

This is a great all-purpose bread with enough body to slice for sandwiches.

Variations:

• Substitute 3 tablespoons molasses for the sugar.


• Add 1 tablespoon Italian seasoning for an herb flavor.


• Set on the dough cycle, then shape into burger buns or sub buns.

FAST HOMEMADE HERB BREAD
1 1/3 cups warm water
1 1/2 teaspoons salt
3 Tablespoons canola or olive oil
3 Tablespoons sugar
4 cups bread flour
1/4 cup minced garlic (or less, if you don't want the garlic to be so powerful)
2 Tablespoons oregano
2 Tablespoons basil
4 teaspoons yeast

Place ingredients in pan in the order specified by your bread machine. Run on the dough setting (the recipe makes 2 lbs of dough, so don't try this in a smaller machine unless you halve the recipe!).

When finished, divide dough on a floured surface. Shape each loaf and place into 2 greased 8x4" bread pans.

Bake at 175 degrees for 35 minutes, then raise temperature to 350 degrees and bake another 25-30 minutes or until golden brown.

Menu Plan Monday: Week of July 6

Well, I've never posted my menu plan before, but many of my favorite bloggers participate, so I thought I'd give it a try. My friend and I often find ourselves in the "What's for dinner?" discussion and she's great about sharing her menus and recipes. On weeks when I sit down and menu plan, I make better use of items on sale that week along with what we already have stocked up in our pantry and freezer (so that nothing goes to waste).

I should preface this first-ever menu by explaining that we have become a freezer cooking family. We don't eat freezer meals exclusively, but it's so nice to have the meals prepared and ready to go in the freezer. Most of the time, this involves buying meat on sale and preparing it (trimming, breading/coating, marinating, etc), then freezing it in meal-size portions. Since I'm not a huge fan of handling raw meats, I'm glad to avoid that part of the cooking each night. My husband is also a master at the grill and is willing to stand outside (even if it's raining) while I prepare the side dishes inside!
