Recipes for Bone-In Chicken Pieces


Do you ever wonder WHY you'd want to buy 10 pounds of chicken at a time? Yes, buying in bulk often has benefits - and a lower price is only one of them! Preparing meals in bulk ALSO has benefits (and I can't recommend it highly enough, especially if the dinner hour in your house is as crazy as it is in mine)!

Wondering what to do with all of that chicken you bought on sale for a low price? Then here are 10 RECIPES to get you started!


  • Parsley Parmesan Chicken from 30 Day Gourmet
    Chicken pieces dipped in Italian dressing, and coated with a mixture of bread crumbs, Parmesan and parsley. You can pre-bake this and freeze or simply prepare and freeze.

  • Ziploc Chicken from 30 Day Gourmet (one of our all-time favorites!)
    Marinate chicken with barbecue sauce, cola, garlic & onion powder. Freeze in ziploc bag. Thaw and grill later!

  • Christi's Chicken Marinade from 30 Day Gourmet
    A marinade of soy, balsamic vinegar, brown sugar & garlic - to freeze with the chicken & enjoy later!

  • April's Chicken Marinade from 30 Day Gourmet
    A mix of soy, honey, oil, ginger, dry mustard & garlic

  • Creamy Paprika Chicken from 30 Day Gourmet
    Skinned chicken pieces coated in a sauce of chicken broth, paprika & sour cream. Prep and freeze, then slow cook later. Great served over noodles!

  • Tropical Island Chicken from Taste of Home
    A marinade of soy, canola, garlic ginger, and more!

  • Moist Lemon Chicken from Taste of Home
    Mild lemon zing that keeps the chicken tender.

    Slow Cooked Lemon Chicken from Taste of Home
    Brown chicken in a skillet, then let the crocpot do the rest - with garlic, lemon and oregano.

  • Berry Delicious Barbecue from Taste of Home
    Amazing what condensed tomato soup, cranberry sauce & onion soup mix can do!

  • Italian Chicken Bake from Stacey
    3 chicken leg quarters
    3 medium baking potatoes, diced
    1 c. baby carrots
    1 c. Lite Italian dressing (more or less to your taste)
    1/4 c. grated Parmesan
    1/4 t. black pepper

    Arrange chicken, potatoes, & carrots in a sprayed 9x13 dish. Pour dressing over the top. Sprinkle with cheese and pepper. Bake at 400 for 40-50 min. or until chicken is cooked through.

ALDI: Markdowns - $0.99 Whole Milk Gallons


ALDI on Van Dyke in Shelby Township (north of 21 Mile) has marked down gallons of Whole Milk to $0.99 (dated 4-1-09). They also had Poppy Seed or Blueberry Scones near the register marked down to $0.99 (dated 3-25) and Large Eggs for $0.99 dozen (regular price).

Recipe: Lemon-Glazed Sticky Bread

And THIS is why bags of lemons on sale make my day! My family can't get enough of this bread! We also like Lemon Oregano Chicken - you can marinate and freeze ahead if you like!

Lemon-Glazed Sticky Bread
from Heather Van Vorous

This bread is tart, sweet, and intensely lemony. Though it's luscious and rich, it's low-fat and can also be made dairy-free. Don't forget the glaze - the bread just isn't the same without it. It freezes very well, so I always double the recipe.
Makes one 9 x 5" loaf, 16 slices per loaf

3/4 cup milk (can use rice or soy milk as well)
2 teaspoons apple cider vinegar
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups granulated sugar
1/4 cup plus 2 tablespoons canola oil
2 eggs (or 1/2 cup Egg Beaters or 4 egg whites)
zest from 2 lemons, minced

Glaze:
strained juice from 2 lemons
3 tablespoons granulated sugar

Preheat oven to 350 F. In a medium bowl add vinegar to milk and stir well (this will clabber, or "sour" the milk); set aside. Sift dry ingredients into large bowl. Whisk well to combine. Add to clabbered milk the oil, eggs, and zest. Whisk well until thoroughly combined. Add wet ingredients to dry with a few swift strokes by hand just until blended.

Pour batter into a non-stick loaf 9x5" pan sprayed with cooking oil. Bake for about 1 hour or until a toothpick or cake tester inserted into the center of the loaf comes out clean.

While bread is baking, stir glaze ingredients together until sugar dissolves. When bread is done, and while it is still hot from the oven, run a sharp knife around the edges of the pan to loosen the loaves, and prick bread carefully all over with a thin wooden or metal skewer. Pour glaze over bread, and cool in pan on rack. Bread tastes even better the next day.

Lemon Oregano Chicken
1/2 teaspoon grated lemon zest
2 tablespoons lemon juice
1 tablespoon olive or canola oil
1 teaspoon dried oregano
2 to 3 cloves garlic, crushed
4 boneless, skinless chicken breast halves

Combine all marinade ingredients. Add chicken breast halves to the marinade. Marinate in the refrigerator for at least 2 hours. Grill until done (about 4-5 minutes on a George Foreman grill).
