Recipes for Bone-In Chicken Pieces

Do you ever wonder WHY you'd want to buy 10 pounds of chicken at a time? Yes, buying in bulk often has benefits - and a lower price is only one of them! Preparing meals in bulk ALSO has benefits (and I can't recommend it highly enough, especially if the dinner hour in your house is as crazy as it is in mine)!

Wondering what to do with all of that chicken you bought on sale for a low price? Then here are 10 RECIPES to get you started!

  • Parsley Parmesan Chicken from 30 Day Gourmet
Chicken pieces dipped in Italian dressing, and coated with a mixture of bread crumbs, Parmesan and parsley. You can pre-bake this and freeze or simply prepare and freeze.

  • Ziploc Chicken from 30 Day Gourmet (one of our all-time favorites!)
Marinate chicken with barbecue sauce, cola, garlic & onion powder. Freeze in ziploc bag. Thaw and grill later!

  • Christi's Chicken Marinade from 30 Day Gourmet
A marinade of soy, balsamic vinegar, brown sugar & garlic - to freeze with the chicken & enjoy later!

  • April's Chicken Marinade from 30 Day Gourmet
A mix of soy, honey, oil, ginger, dry mustard & garlic

  • Creamy Paprika Chicken from 30 Day Gourmet
Skinned chicken pieces coated in a sauce of chicken broth, paprika & sour cream. Prep and freeze, then slow cook later. Great served over noodles!

  • Tropical Island Chicken from Taste of Home
A marinade of soy, canola, garlic ginger, and more!

  • Moist Lemon Chicken from Taste of Home
Mild lemon zing that keeps the chicken tender.

Slow Cooked Lemon Chicken from Taste of Home
Brown chicken in a skillet, then let the crocpot do the rest - with garlic, lemon and oregano.

  • Berry Delicious Barbecue from Taste of Home
Amazing what condensed tomato soup, cranberry sauce & onion soup mix can do!

  • Italian Chicken Bake from Stacey
    3 chicken leg quarters
    3 medium baking potatoes, diced
    1 c. baby carrots
1 c. Lite Italian dressing (more or less to your taste)
    1/4 c. grated Parmesan
    1/4 t. black pepper

Arrange chicken, potatoes, & carrots in a sprayed 9x13 dish. Pour dressing over the top. Sprinkle with cheese and pepper. Bake at 400 for 40-50 min. or until chicken is cooked through.

Do you have a bone-in chicken favorite? Be sure to comment and share your recipe!

A Full Cup: New and Improved Website!

A Full Cup, my absolute favorite coupon forum, had an extreme makeover today and has launched an all-new site! AFC has helped our family to save over $2,000 in 2009 alone!

If you haven't visited A Full Cup, here are just a few of the features you can benefit from:
  • An extensive COUPON DATABASE which includes links to printable coupons along with information about where to find manufacturer coupons
  • An active FORUM where shoppers discuss store-specific deals, money-saving ideas and challenges, and more
  • Opportunities to TRADE COUPONS with others, including a rating system for your safety and a personal inbox so that you don't need to use your personal email account
  • Ongoing COUPON TRAINS you can "ride" to send and receive coupons weekly from around the country
  • Friendly, helpful AFC USERS who encourage questions without criticism. You can even sign up for a Coupon Buddy (to answer your questions) and a Coupon Fairy (to get your coupon stash started). I am always amazed at the kindness of those on AFC.

There are even more amazing features yet to be unveiled! I've heard about the possibility of printable shopping lists and more! Check it out (and you can say that jonoma sent you!).

I'd LOVE to hear from my blog readers who are already on A Full Cup - what are your favorite things about AFC?

Super K: Super Doubles through Saturday, March 14

If you have a Kmart Super Center (Super K) location near you - or you're willing to take a drive - you can have some fun with double coupons up to and including $2 through this Saturday, March 14.

Super K locations include:

  • 17580 FRAZHO in ROSEVILLE (586) 498-3359
  • 29101 JOHN R ROAD in MADISON HEIGHTS (248) 546-8000
  • 2101 TELEGRAPH in BLOOMFIELD HILLS (248) 335-7844
  • 19990 TELEGRAPH in DETROIT (313) 537-8010
  • 1179 32ND STREET in PORT HURON (810) 989-7600

View the Super K ad with information about $2 super doubles. Limit one coupon per item, up to 75 coupons per visit per day. Limit 4 identical items with coupon per transaction.

Take a look at the Kmart Shopping List on AFC for coupon matchups.
Visit the AFC KMart Forum to see which deals people are talking about!

MY NOTE: Use coupons that are good on ONE item ($1.00/1, $1.50/1, $0.75/1, etc), because they will all double correctly. Coupons that offer a discount on more than one item ($1.00/2, $1.00/3, $2.00/2, etc) generally will NOT double correctly because of the way KMart's computer system works. The system will usually double only up to the cost of one item, and you won't get the deal you were expecting.

Thanks to Jaime for this tip!

*This deal requires a coupon to DOUBLE at Meijer. Note that most Meijer stores will double only 2 identical coupons (up to $0.50) per transaction. See notes below.

**Please note: Some Meijer stores may not allow you to combine a Mealbox (store printable coupon) with a manufacturer coupon. This may vary according the location and the cashier you get. As a general rule, it is legal to combine a store coupon with a manufacturer coupon for the same item. Mealbox coupons have recently changed to read "not to be combined with other Meijer discount coupons", which local store managers interpret to mean that you may not stack it with another store coupon.

(10 for $10 - 11th free)
items can be mixed and matched. Combine to select 11 items across the sale for the best savings.

And that's not necessarily all! I was able to list the BEST deals, but there are still other good deals, depending on what your family needs. View more matchups here (note that prices may vary): A Full Cup Meijer Matchups

I'll do my best to keep this post updated with new Meijer deals this week. Let me know if you see any other good deals I've forgotten to mention! View the Meijer Ad online here.

Please remember:

  • MOST Macomb Meijer stores will double coupons up to $0.50, but no more than 2 identical coupons per transaction. The new Cass/Groesbeck location will double no more than one (of each identical) per transaction. The Fraser location (15/Utica) sometimes will double 3. You may want to call your location before shopping to be sure.

  • You can print 2 copies of each printable coupon per computer. Use your back button; refresh the screen if necessary. You can print as many Mealbox coupons as you'd like, but the computer will only deduct one identical coupon per transaction.

  • If a particular sale item is out of stock, be sure to ask your cashier for a raincheck.

This week my matchups are part of the Grocery Gathering at BeCentsAble!

Swag Bucks: Earn Rewards for Online Searches

Just wanted to share this with you as one way to put a little extra gift card spending money in your pocket! Start now and you can save up in time for Christmas shopping! Swag Bucks is a search engine that rewards you for searching (something you'll probably do anyway).

Some details:

  • Search Results: The Swag Bucks search engine is powered by Google and Ask, so your search results don't suffer in quality.

  • Great Rewards: You earn Swag Bucks randomly just for searching the internet, anywhere from 1-5 Swag Bucks per reward (an average of 1 to 3 Bucks per day). Just 45 Swag Bucks will buy you a $5 Amazon e-Gift Card (which can be saved and combined for a larger order). Rewards are also available for Target, Barnes & Noble, Starbucks, iTunes, and more. You can see how these will add up quickly!

  • User-Friendly: The Swag Bucks website is easy to use. You simply sign up, click on a link in your email, and you're on your way! You can also download a search toolbar for your convenience.

I was admittedly a little skeptical about this at first, thinking that it sounded almost too easy. It's been recommended by blogs I trust, like Money Saving Mom, so I finally tried it for myself. By just switching to their search engine, I'm already earning towards an e-gift card. The very best part? I'm not spending any extra time doing it!

Interested in trying it for yourself? What do you have to lose?!

Recipe: Lemon-Glazed Sticky Bread

And THIS is why bags of lemons on sale make my day! My family can't get enough of this bread! We also like Lemon Oregano Chicken - you can marinate and freeze ahead if you like!

Lemon-Glazed Sticky Bread
from Heather Van Vorous

This bread is tart, sweet, and intensely lemony. Though it's luscious and rich, it's low-fat and can also be made dairy-free. Don't forget the glaze - the bread just isn't the same without it. It freezes very well, so I always double the recipe.
Makes one 9 x 5" loaf, 16 slices per loaf

3/4 cup milk (can use rice or soy milk as well)
2 teaspoons apple cider vinegar
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups granulated sugar
1/4 cup plus 2 tablespoons canola oil
2 eggs (or 1/2 cup Egg Beaters or 4 egg whites)
zest from 2 lemons, minced

strained juice from 2 lemons
3 tablespoons granulated sugar

Preheat oven to 350 F. In a medium bowl add vinegar to milk and stir well (this will clabber, or "sour" the milk); set aside. Sift dry ingredients into large bowl. Whisk well to combine. Add to clabbered milk the oil, eggs, and zest. Whisk well until thoroughly combined. Add wet ingredients to dry with a few swift strokes by hand just until blended.

Pour batter into a non-stick loaf 9x5" pan sprayed with cooking oil. Bake for about 1 hour or until a toothpick or cake tester inserted into the center of the loaf comes out clean.

While bread is baking, stir glaze ingredients together until sugar dissolves. When bread is done, and while it is still hot from the oven, run a sharp knife around the edges of the pan to loosen the loaves, and prick bread carefully all over with a thin wooden or metal skewer. Pour glaze over bread, and cool in pan on rack. Bread tastes even better the next day.

Lemon Oregano Chicken
1/2 teaspoon grated lemon zest
2 tablespoons lemon juice
1 tablespoon olive or canola oil
1 teaspoon dried oregano
2 to 3 cloves garlic, crushed
4 boneless, skinless chicken breast halves

Combine all marinade ingredients. Add chicken breast halves to the marinade. Marinate in the refrigerator for at least 2 hours. Grill until done (about 4-5 minutes on a George Foreman grill).

And these recipes sound delicious, too!

Christmas Tree Shops: Grand Opening!

"Funny Name. Serious Bargains.
What's with our name? Well, we started as a holiday gift shop, but discovered we had a knack for finding amazing products all the time, from all over the world. So every time you shop, there's something new to discover - at a bargain price you've got to see to believe!"

I've been able to browse Christmas Tree Shops once since it's opened, and I was pleasantly surprised. The store is very clean and well-organized for a closeout bargain store, with name brands you'll recognize! It's a Bed, Bath, and Beyond company store AND a fun place to look around - and this month there's some extra incentive: a coupon for 20% off your entire purchase (expires 3/29/09) in today's Sunday paper! Clip it now and save it for later!

Christmas Tree Shops is located on Hall Road in the same plaza as Target (Shelby Corners). They're open 9 am - 9 pm Monday through Saturday and 10 am - 7 pm on Sunday. You can take a look at the current sales flyer here.
