Recipe: Apple Harvest Cake or Quick Bread

With apples at $0.99 for a 3 lb bag at Meijer on Saturday or $1.19 (or less) for a 3 lb bag at Aldi, now is a great time to whip up a batch of our favorite Apple Harvest Bread! You can also bake it as a cake with a rich cream cheese frosting, but it's very sweet and moist on its own!

For a lower-fat option, I make Apple Harvest Bread using the same recipe, with a few variations:
  • In place of 1 1/2 cups oil, use 1 cup applesauce (I prefer unsweetened) and 1/2 cup oil.
  • I use 1/2 cup EggBeaters (or 4 egg whites) in place of the 2 eggs.
  • Omit optional walnuts.
  • Bake in 2 loaf pans for 40-50 minutes.
This bread is a winner! I've used Granny Smith, Gala, McIntosh and Golden Delicious apples and it's great every time. I never make it without doubling the recipe, and often make mini-loaves for friends and neighbors. It's worth the time you'll save in making a big batch - and it freezes so well that you'll be glad you did! Just wrap each loaf in plastic wrap or foil, then place in a freezer bag.
