Stuffing and Pork Chops Skillet with Fresh Asparagus

Prep Time: 5 min
Total Time: 20 min
Makes: 4 servings

4 boneless pork chops (1-1½ lb) - $1.37 per pound - $1.37
1 medium onion, sliced - $0.60
1 tbsp oil
2 medium apples, thinly sliced - $1.00
1½ cups water
1 pkg (6 oz) of Kroger brand Stuffing - $1.39
1 lb. of fresh asparagus - $1.00

Total Cost - $5.26 for 4 servings

  1. Cook chops and onions in hot oil in large skillet 4 min on each side or until chops are cooked through. Transfer to plate; cover to keep warm.
  2. Add apples and water to skillet. Bring to boil.
  3. Stir in stuffing mix. Top with the chops and onions; cover. Remove from heat; let stand 5 min.

To Cook Asparagus - Rinse the asparagus in the sink. Sprinkle a dash of salt on the asparagus. Place in a microwave safe dish - Cover the dish, leaving one corner open to vent. Microwave on high for 2 to 3 minutes, depending on the thickness of the spears. Stir the asparagus and test for doneness - they should be crisply tender. If more time is needed, cover as before, and cook in 30 to 45 second intervals, rearranging the spears each time, until crisply tender.
