Meijer Money-Saving Recipe: Chuck Roast & Noodles with Roasted Asparagus

These recipes coordinate with items on sale at Meijer the week of November 8-14 at Meijer stores. They're intended to help with your meal-planning!

Chuck Roast With Homemade Noodles

1 (3 pound) boneless beef chuck roast (on sale this week for $2.19/lb)
1/2 cup chopped onion
2 tablespoons vegetable oil
2 1/2 cups water, divided
1 cup all-purpose flour
1/2 teaspoon salt
1 egg
2 tablespoons milk
1 (14 ounce) can beef broth
pepper to taste

  1. In a Dutch oven, brown roast and onion in oil. Add 1/2 cup of water. Cover and bake at 325 degrees F for 2-1/2 to 3 hours or until the meat is tender.
  2. Meanwhile, to make the noodles, combine flour and salt in a bowl; make a well in the center. beat egg and milk; pour into well. Stir to form a stiff dough. Turn onto a well-floured surface; roll into a 15-in. x 12-in. rectangle. cut into 1/8-in. strips. Cover and refrigerate until ready to cook.
  3. Remove roast and keep warm; add broth and remaining water to pan. Bring to a boil; add noodles. Cook for 8-10 minute or until tender. Drain; season with pepper. Serve with the roast.

Note: Based on reviews, add your own seasoning to the meat before cooking. People also recommended doubling the noodle recipe. If you're short on time, substitute egg noodles.

Thyme Garlic Roasted Asparagus
3 garlic cloves, minced
Cooking spray
1 pound asparagus, trimmed (on sale this week for $1.99/lb)
1 teaspoon olive oil
1/2 teaspoon dried thyme
1/4 teaspoon salt

  1. Preheat oven to 400°.
  2. Spread garlic in an 11 x 7-inch baking dish coated with cooking spray. Arrange asparagus in an even layer over garlic; drizzle with oil. Combine thyme and salt; sprinkle evenly over asparagus.
  3. Bake at 400° for 15 minutes or until asparagus is crisp-tender, turning once.
