Recipe: Sunrise Squares

This is the Meijer money-saving recipe of the week (using items on sale November 22-28) - great for breakfast, brunch or an unconventional dinner. Colleen recommended this recipe, which can also be found here on the Bob Evans website.

Sunrise Squares (recipe from Bob Evans)
Makes 6 squares

1 lb roll sausage (Odom’s Tennessee Pride is on sale - $1.45 after coupon)
2 slices bread, cut into 1/2 inch cubes
1/2 cup diced green and red peppers (I just use green since they are cheaper)
1 C shredded sharp cheddar cheese (Kraft shredded is on sale - $1.69)
6 eggs
2 cups milk
1/2 tsp salt
1/2 tsp dry mustard

  1. Preheat oven to 350. Crumble and cook sausage until browned. Drain off fat. Spread bread cubes in well greased 11x7" baking dish and top with sausage, peppers and cheese.
  2. Whisk together the eggs, milk, salt and dry mustard until well blended and pour over cheese. Bake 30-40 minutes or until set. Let stand 5 minutes before cutting into squares, serve hot.

You could also serve up some free Pillsbury Grands biscuits with the eggs!
