Please Share Your Best Ground Beef or Ham Recipe!


Next week's Meijer Brand sale is underwhelming, to say the least. However, a few prices are worth noting:

$0.89/lb Cook's Shank Portion Smoked Ham (save $1.40/lb)
$1.69/lb Angus Ground Beef from Round (save $2/lb)

So, here's where YOU come in. I know you must have some great recipes to share. Would you mind enlightening us this week with a great recipe that uses ham or ground beef? We could all use some new menu ideas - and creative ways to use meat that's on sale this week as well!

  1. I am super excited that its going to be a slow week at Meijer, I need a rest! My family was just talking about a dinner my mom used to make that we called "boiled dinner"...it is simply a ham shank in a pot, cover with water..add hunks of cabbage, carrots and potato's and boil until everything is cooked, the flavoring from the ham makes everything so tasty!

  2. Yes, I agree the sales are underwhelming this week. A couple of our favorite recipes...

    Cheesy Ham-Broccoli Casserole
    1/2 c. Miracle Whip
    2 c. chopped broccoli flowerettes, fresh or frozen (use the frozen from last week's sale)
    1 1/2 c. shredded cheddar cheese
    1 1/2 c. (8 oz.) chopped ham
    1 1/2 c. noodles, cooked & drained
    1/2 c. chopped pepper (red or green)
    1/4 c. milk
    3/4 c. seasoned croutons (optional
    Combine all ingredients except croutons in a 1 1/2 quart casserole. Top with croutons. Bake at 350 for 30 minutes or microwave on high for 8-10 minutes. Enjoy!


    Taco Soup
    1 lb. ground beef
    1 onion, diced
    28 oz. can diced tomatoes
    15 oz. tomato sauce
    1 cup water
    15 oz. pinto beans, rinsed & drained
    16 oz. corn, drained
    1 envelope taco seasoning mix
    shredded cheddar or Mexican blend cheese
    corn chips
    Brown ground beef & onion; drain. Add tomatoes, tomato sauce, water, beans, corn & taco seasoning. Bring to a boil. Reduce heat & simmer for 5 minutes. Serve with cheese & corn chips. Serves:6

  3. I am so glad this is a slow week. We moved and I haven't been shopping in 2 weeks. Thank God for my stockpile that we have been living on. The last thing I feel like doing this week is shopping.

    We liked this recipe, but adjusted the seasonings. It also makes an overwhelming amount, way more than 6 servings.

    Hamburger Steak with Onions and Gravy
    Serve with mashed taters

    1 pound ground beef
    1 egg
    1/4 cup bread crumbs
    1/8 teaspoon ground black pepper
    1/2 teaspoon seasoned salt
    1/2 teaspoon onion powder
    1/2 teaspoon garlic powder
    1 teaspoon Worcestershire sauce
    1 tablespoon vegetable oil
    1 cup thinly sliced onion
    2 tablespoons all-purpose flour
    1 cup beef broth
    1 tablespoon cooking sherry
    1/2 teaspoon seasoned salt

    1. In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 8 balls, and flatten into patties.

    2. Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.

    3. Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry. Season with seasoned salt. Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes.

    Honey Garlic Meatballs

    2 lbs lean ground beef
    1 cup dry fine bread crumbs
    2 eggs
    1 tsp seasoning salt
    1 Tbsp butter
    6 cloves garlic, minced
    3/4 cup ketchup
    1/2 cup honey
    1/4 cup soy sauce

    1. Preheat oven to 500. Combine first 4 and make walnut sized balls. Bake spread out on jelly roll pans for 8 mins, turn them over and bake another 8 minutes.

    2. While baking, soften garlic in butter in large frying pan. Add rest, simmer. Add balls and simmer to coat. Serve with rice.

    Ham and Sausage Jambalya---makes a ton

    1 1/2 pounds hot Italian sausage
    3 tablespoons oil
    1 pound ham, diced
    4 whole onions, chopped
    2 whole bell peppers, chopped
    4 ribs celery, chopped
    1 large can tomatoes
    6 cups beef or chicken stock
    4 cloves garlic, chopped
    4 whole bay leaves
    1/4 teaspoon powdered cloves
    1/4 teaspoon allspice
    1 sprig thyme (or 1/2 tsp
    -- powdered
    -- thyme)
    1 teaspoon chili powder
    salt, black and cayenne
    -- pepper to taste
    4 cups raw rice
    1 bunch green onions, chopped

    1. Slice the sausage and fry it up in the oil (preferably in a big cast iron pot) until it is brown. Then add the ham. Stir the ham and sausage mixture while chopping the onions, peppers and celery. Then add these vegetables to the pot and cook until they are tender. Nest, add the tomatoes and cook a few minutes more. Add the stock, bring to a boil and let simmer for 30 minutes.

    2. While the food is simmering, chop and add the garlic, the bay leaves, thyme, chili powder, allspice, cloves, salt, black pepper and cayenne pepper. [Unless you have a healthy tolerance for hot food, start off with 1 teaspoon of cayenne pepper and taste before adding the rice.]

    3. Now add the rice, bring to a boil and keep it there for about 3 minutes. Then cover the pot and set stove to very low heat. After 15 minutes, stir the jambalaya. If it seems dry, add some more water. Put the lid back on and cook for 15-20 more minutes. Add the chopped green onions a few minutes before serving.

    4. This makes 8-10 servings. Also, it freezes very well, so don't be afraid to make a lot.

    I use less chili powder, cumin, and omit the green chilis so the kids will eat it. But I love it with the garbanzo beans and zucchini......I use what ever vegetable I have on hand, brocolli, cauliflower, beans etc. Yummy!
