Meijer Money-Saving Recipe: Southwest Chili Mac

This recipe uses items on sale the week of November 15-21 at Meijer stores. It's intended to help with your meal-planning! Many thanks to Rachel for putting this recipe idea together!

Southwest Chili Mac

Ingredients
1 1/2 lbs. lean ground chuck ($2.84)
1 medium onion, diced
1 tsp. salt
1 tsp. pepper
2 cans (15.5 oz. each) Brooks Chili beans ($.38 per can)
1 can (10.75 oz.) Tomato soup
1 can (10.75 oz.) water
1 cup Ketchup
2 cans (14.5 oz. each) Stewed Tomatoes
1 Tbsp. Chili Powder
4 oz. Shredded Cheddar Cheese
4 oz. sour cream (Meijer brand is $0.99 for 16 oz)
1/2 cup green onion
2 cups cooked macaroni

Directions

  1. In a medium frying pan, brown ground chuck and onion; drain. Add salt, pepper, beans, tomato soup, water, ketchup, stewed tomatoes and chili powder; mix well.
  2. Bring to a boil over high heat. Reduce heat and simmer, uncovered 1 to 2 hours. Serve mixed with macaroni noodles. Garnish top with sour cream, cheese, and green onion. Optional: add nacho chips for dipping!
